Superfood Chocolate Raspberry Chia Seed Pudding
Decadent, flavorful, light, and oh so healthy, this chocolate raspberry chia seed pudding is the perfect way to put a pep in your step.
Chia seeds have become a staple in many vegan diets today. Loaded with protein, fiber, and much more, it’s easy to see why this tiny superfood has become so popular.
I decided to take traditional chia seed pudding to the next level by combining it with antioxidant rich cacao powder and coconut milk for a rich serving of healthy, waist-slimming fats. Use this quick and super easy to make recipe to start your day, as a snack, or to healthfully indulge after dinner.

Ingredients (makes 2 servings)
Chia seeds - ⅓ cup
Coconut milk - 2 cups
Maple syrup (or sweetener of choice) - 2 tbsp
Raw cacao powder - 4 tbsp
Raspberries (for topping) - 1 cup

Chia seeds - packed with Omega 3’s, plant protein, fiber, magnesium, potassium AND antioxidants. Who knew that such a teeny tiny little seed could pack so much punch?
